Dates of Employment: April 2025 – September 2025

Employment Terms: Full time, Seasonal, Temporary

Expected Hours: 40+ Hours/week, Weekends, Holidays

Pay: $18 gross per hour

Job Purpose: The Trinchera Ranch is looking for a hard-working line cook to produce all assigned menu items in an efficient and consistent manner while following the specifications, recipes, and techniques set by the culinary team.

  • Maintain an orderly and sanitary workstation including tables, shelves, broilers, sauté burners, ovens, flat top griddles, and refrigeration equipment both during and after service.
  • Follow proper guidelines and practices for food safety/sanitation.  
  • Set up and stock stations with all necessary supplies.
  • Prepare food for service (e.g. chopping vegetables, butchering meat, or preparing sauces).
  • Prepares a variety of meats, seafood, poultry, vegetables, dairy and other food items using knives, electric mixers, immersion blenders, food processors, scales, and portion bags.
  • Processes prepared foods for service using ovens, gas stoves, griddles, and broilers.
  • Assure that each item is cooked to the Chef and guest’s expectations and comes out simultaneously, in high quality and in a timely fashion.
  • Garnish each dish properly, following the instructions provided. 
  • Stock inventory appropriately.
  • Assist with dishwashing tasks as needed.
  • Use tools, materials, and other equipment properly and safely.
  • Willing to work overtime, weekends, and holidays as requested by management.
  • Ability to work independently and as part of a team.
  • Perform other Ranch duties as assigned

Knowledge: Strong knowledge of cooking methods, kitchen equipment, and best practices.

Skill: Basic culinary skills including chopping, organizing, prepping, and knife skills are a plus.

Education: Some culinary education is preferred.

Experience: Some previous culinary experience is required. 

Working Conditions:

  • This position has frequent exposure to periods of high activity, interruptions, and high stress under demanding conditions.  
  • The position requires communication with Company employees, guests, and other individuals.  
  • Work hours will vary depending upon the needs of the Company’s customers at any given time and will involve working long or non-traditional hours to fulfill Company and/or customer needs, projects, or special circumstances. 
  • The noise level in the work environment is usually moderate.
  • Moderate physical activity is required. 
  • Must possess the ability to lift items over 50 pounds occasionally and up to 15 pounds frequently. 
  • This position requires standing for extended periods, walking, stooping/bending, lifting, repetitive motion and using hands to finger, handle, or feel objects, tools, or controls, and normal vision.
