Fresh rainbow trout caught from the waters of Trinchera Creek and butter churned by hand from our Amish neighbors are just a few of the components that combine to make each dish a devotion to land and community. The Garden
<p>Fresh herbs and vegetables are grown in the warmer months in Trinchera’s Garden. A testament to our staff’s commitment to sustainability, The Garden is a source of produce grown without the use of pesticides or harmful chemicals. Everything grown in The Garden is used in Trinchera’s kitchen, so guests can enjoy locally grown, farm-to-table cuisine while in season. Outside of The Garden, Trinchera supports a resilient food system by sourcing from local farms, including San Luis Valley Local Foods Coalition, Rio Grande Farm Park, Gosar Sausage, and San Luis Valley Brewing Company.</p>
Chef Bea
<p>Born in Germany, Chef Bea brings international style and technical flare to the Trinchera palette. Her creative talents began in the computer world and transferred to the kitchen when she began to long for a wider variety of foods prepared with excellence. In her 12 years at Trinchera, she has transformed ranch dining from meals to an exceptional experience that features authentic taste from fresh, simple and tasteful ingredients sourced from local landscapes. With a focus on health, each meal offers organic and, when in season, locally sourced ingredients. Meals are tailor-made to the individual guest.</p>
